CLUB Programs 206.464.3060 • clubprograms@wac.net Honing Your Kitchen Knife Skills Tuesday, September 17 Have you ever watched a professional chef slice vegetables or cut up a chicken? Skilled, precise movements—and the proper knife—are the keys to success. Learn how to use, sharpen and care for your kitchen knives with Executive Chef Eric Floyd. We invite you to bring two knives from your own kitchen for two different purposes—to chop and to bone. Eric will first demonstrate how to sharpen a knife. After his demo, you're welcome to try sharpening one of your own. You'll also learn the safe and correct way to chop an onion and slice a carrot with a chef's knife, and cut up a whole chicken with a boning knife. The art of filleting a fish will also be demonstrated. Gain kitchen confidence and have some fun at this evening event, which includes knife skills instruction, raw chicken and vegetables to cut up, and instructional recipes. Light appetizers and non-alcoholic beverages will be served. 6–8 pm; $55; cancel by September 9 Business Etiquette for Business Minds Practicalities of business dinners require a basic knowledge of etiquette that will ensure your success. Even if the event is a casual reception, there are protocols for food and beverage etiquette that can carry you through anything you encounter. Arden Clise of Clise Etiquette will teach you how to maneuver through business events. Her insights will include advice for networking at a reception, the silent service code, guidelines for toasting, wine basics, appropriate tipping, and other indispensable information. She'll also share insights into the relationship between thoughts and health and discuss how hypnotherapy can help you achieve the wellness and excellence you desire. Martin Short: Live Thursday, October 3 Celebrated actor and comedian Martin Short is hitting the stage at the Paramount Theatre for a PG-rated, family friendly, one-man variety performance. Characters from throughout Short's career will be ROLFING Thursday, September 19 each, along with pâté, a cousin of foie gras. Eric will also give you home recipes that use saffron and truffles as well as a basic recipe for pâté. He'll discuss the differences in size, color and flavor that drive caviar's exorbitant prices as well as some great serving ideas.
