U S I N G Y O U R C L U B By Robert Long Cakebread Cellars 2013 Chardonnay Napa Valley, California Tasting Notes: This 2013 Napa Valley Chardonnay made from 100 percent Chardonnay grapes has a fresh flavor profile of fragrant apple and melon with aromas of pear and oak spice. Its rich, smooth texture allows for a long, succulent finish, which enhances its flavor, including touches of nectarine and honeydew. Discovery: In 2013, a warm spring and mild summer caused Cakebread growers to harvest at night. Plucking the Chardonnay grapes while they are cold helps them retain their purity and natural bright acidity. After whole-cluster pressing, the juice was fermented in a mix of French oak barrels and stainless steel tanks. This fermentation process revealed a stunningly delicious wine. Pair it with the sea salt Alaska scallops in Torchy's. —Robert Long is a WAC restaurant manager and WAC Director of Wine. ANNUAL REPORT And we're just getting started. F I S C A L
