MARK STELMACH ›✪SOUS CHEF Between his years in the banquet kitchen and his years in the 2nd Floor kitchen, Sous Chef Mark Stelmach has prepared, assisted or overseen the preparation of tens of thousands of meals at the WAC. Executive Chef Eric Floyd says the entire kitchen team respects and appreciates Mark. "He's my right-hand man," Eric says. Mark has worked at the Club for 16 years. He clearly communicates potential issues to front-of-the-house managers to ensure excellent member service and foresees problems before they occur. He also creates a fun environment but quickly buckles down when things get busy. "He's a team player and a born leader," Chef Eric says. "And he's dedicated to the enrichment of members' lives." Mark also has taken the lead in developing the restaurants' evening menu changes, a weekly occurrence that adds interest to the dining experience and helps the restaurants thrive. "I am proud to have him on our management team," says Restaurant Operations Manager Danielle Crowson. ✪DID YOU KNOW? ✪ ✪ ✪ Mark started at the WAC 17 years ago this coming January. ✪ He loves to golf but says he still isn't getting any better. ✪ ✪ He's a huge football fan and pulls for the Green Bay Packers. ✪ ✪ He's from Wisconsin, hence his Packer ties, and he attended the other UW. ✪ 18 | Washington Athletic Club Magazine | OCTOBER 2012
