CLUB PROGRAMS 206.464.3060 • clubprograms@wac.net During a tequila flight, you'll learn the nuances of different tequilas' tastes and why some are classically used as mixers while others are meant to be enjoyed straight-up. As with fine wine, quality tequila is a drink to be savored. You'll also learn the versatility of tequila as you sample some of Poquitos' crafted tequila cocktails—including a traditional Margarita, Poquitos Punch (a house version of a Spanish sangria) and even a tequila Manhattan! Your tastebuds will shout arriba as the beverages complement tapas such as queso fundido, chicken tinga empanadas, yam tacos, house- pressed tortillas and made-to-order guaca- mole. After taking your tongue on a Mexican vacation, you'll be ready to put your tequila knowledge to work the next time you're faced with Jose Cuervo or Patrón. With buckets of information thrown at consumers every day, many are left wondering how to start shopping and enjoying local flavors. Chef instructors from Blue Ribbon Cooking school will escort us through a shopping experience at Pike Place Market, where we'll learn about Northwest flavors from produce stands, butcher counters and fish markets. Learn tricks and tips on how to choose the most ripe and flavorful produce—and what to seek when buying fish and poul- try. After collecting and tasting local items at the market, we'll continue the tour by tasting olive oil, vinegars, pestos and more at La Buona Tavola–Truffle Café and by sampling wine at The Tasting Room in Post Alley. Afterward, we'll proceed to the kitchens of Blue Ribbon Cooking in Eastlake for an after- noon of hands-on cooking instruction. We'll create a four-course menu using the delightful Northwest ingredients gathered from the market. Finally, we'll sit down and savor the bounty. Each restaurant stop on our tour will feature specialty appetizers and beverages. It's a great way to find a new favorite restau- rant in Seattle. Dog Mountain Farm in Carnation offers a weekend summer dinner series that fea- tures an area guest chef and winemaker. The chef prepares a gourmet meal using the farm's and other local products and serves it with wine pairings. It all takes place outdoors in an apple orchard over- looking the Cascade Mountains. Owners David and Cindy Krepky will welcome us to their 25-acre farm with smiles, cham- pagne and sparkling water.
