IN THE KNOW Your Brain on Seahawks: How Passion & Engagement Optimize Brain Function & Health Wednesday, September 3 Contact Club Programs for availability. 6–7:30 pm; $32 Making Paella with Executive Chef Eric Floyd Wednesday, September 24 Transport yourself to Spain for an evening and learn to make paella, a delicious rice dish that originated in Valencia. In this hands-on class with WAC Executive Chef Eric Floyd, you will learn the complex art of making seafood paella. We will provide a paellera—a paella pan—for each guest to take home. Also included in the class is Chef Eric's authentic recipe, all ingredients, two hours of instruction, and paella to sample. No-host bar with beer and Spanish wine will also be available. 6–8 pm; $68; cancel by September 16 N E W Stuffed Pasta Class at Tom Douglas' Trattoria Cuoco Saturdays, November 1, 8 is hands-on class shows you how to make delectable fresh stuffed pasta, as instructed by Cuoco Chef Matt Fortner and pasta expert Rebecca Wilson. Learn their techniques for making your own pasta as they discuss and explain the many varieties of filled noodles. You'll be taught how to make dough and create pastas such as agnolotti dal plin (pinched, flattened dough), cappelletti (little hats) and the quintessential stuffed pasta, ravioli. Class ends at noon and is followed by a lunch of pasta and wine. Aprons and cooking uten- sils are provided; each class limited to 12. N E W Modern Manners for Modern Kids Sunday, October 19 Proper manners travel far beyond "please," "thank you," and basic table manners. Modern Manners for Modern Kids will focus on all aspects of both table and social manners. Arden Clise of Clise Etiquette will use her experience as an etiquette con- sultant, radio host and columnist to teach young WAC members the importance of everyday etiquette. She'll start with social manners, introductions, and telephone and email conversations. en she'll talk about etiquette in public places and common courtesies. Students will also learn how to set a table, handle silverware, eat difficult foods, and interact at a meal. Clise, who has more than 25 years of experience, will give each child the knowledge and tools to understand how to act and why, which can help build self-confidence. With the holiday season right around the corner, this class is the perfect brush-up for those impending special festivities. Includes two-hour class, a two-course lunch, and printed material for review at home. 11 am–1 pm; $75; cancel by October 3 N E W 65th Annual Mother Son Banquet "Football Frenzy" Friday, November 21 Finally, football season is here! "Fandemonium" is at an all-time high, and the WAC is bringing the 12th Man fever to the 65th Annual Mother Son Banquet's "Football Frenzy." It's time to combine passion, competition, yummy food, and fun activities into a night out with your son. e evening will kick off with memo- ry photos, a pre-game social and a delightfully delicious build-your-own-burger bar buffet served in the Crystal Ballroom. After you have stacked your burger with all the toppings you can dream of and capped your meal off with a chocolate mousse and cookie parfait, the real fun will begin! e 8th Floor Gym will turn into "WAC Field" for a winner-take-all flag football game. e boys need coaches, right? So who better to coach these young men than Blitz from the Seattle Seahawks and Harry the Husky from the University of Washington? A football game is not com- plete without someone calling the play-by-play, so WAC CEO and former Huskies radio commentator Chuck Nelson will keep the cheering crowd on the running track entertained and rooting for their team. More event details will be revealed in the October edition of the WAC Magazine.
