Two of the boxers, Albert Ta and Sam Frankel, participated in the WAC's main event this past January in the 8th Floor Gym. Christopher volunteers as coach. His boxers say his coaching improves their discipline and fitness. The program's mission is to develop leaders of character who serve their communities as ambassadors of UW. Christopher says he aims to develop good boxers as well as great students. 2008 Spring Valley Vineyards, "Katherine Corkrum," Walla Walla Valley, Washington TASTING NOTES: Made of 100 percent Cabernet Franc, this wine has a deep purple hue on the rim and offers an ultra complex and earthy nose. Hay, black pepper, wheat, and tobacco waft up to meet you at first sip. Black raspberry, cherry, and caramel are on the palate, followed by a solid structure and tannins that are soft and fine-grained. It finishes lushly with caramel and butter toffee notes. This wine is perfectly paired with any of the barbecue items WAC Executive Chef Eric Floyd is creating exclusively for Torchy's and Hagerty's this May. Leo Santiago L u k e R u ta n WAC member And University of Washington boxing coach and WAC member Christopher Mendez. DISCOVErY: History is the cornerstone of Spring Valley Vineyards. The names given to each wine are a tribute to the family members who have succeeded in farming the same land where the vineyard and winery now flourish. Hard work, traditional values, and deep family ties have kept the ranch going for more than a century. This wine is named in honor of uriah Corkrum's wife, Katherine, who moved to Walla Walla Valley from her native Wales in 1897. —Sara A. Williams is a WAC Restaurant Manager and a Level 1 Sommelier.
