IN THE KNOW Stuffed Pasta Class at Tom Douglas' Trattoria Cuoco Saturdays, November 1 & 8 (SOLD OUT) Saturdays, January 24 & 31, 2015 This hands-on class shows you how to make delectable fresh stuffed pasta, as instructed by Cuoco Chef Matt Fortner and pasta expert Rebecca Wilson. Learn their tech- niques for making your own pasta as they discuss and explain the many varieties of filled noodles. You'll be taught how to make dough and create pastas such as agnolotti dal plin (pinched, flattened dough), cappel- letti (little hats), and the quintessential stuffed pasta, ravioli. Class ends at noon and is followed by a lunch of pasta and wine. Aprons and cooking utensils are provided; each class limited to 12. Cuoco is located in South Lake Union. 10 am–1 pm; $52; cancel one week prior Movies of the 1930s with UW Professor Emeritus Jon Bridgman Tuesday, November 18 A glimpse back at the 1930s will take you to an era known as "the golden age of Hollywood" (and, of course, to an era when the WAC opened 85 years ago). In spite of the Great Depression and the rise of fascism in Europe during this time, Hollywood's newest genre of film—screw- ball comedy—took hold. The rest, as they say, is history. We are honored to welcome back UW Professor Emeritus of History Jon Bridgman, renowned by generations of students and WAC audiences, to discuss how the '30s came to be known as the time when movies really counted. Some of the best and most well-loved movies ever made came from this period. They have stood the test of time even as black and white films. As this country was gripped in despera- tion, citizens escaped to the movies to lose themselves in the company of Carole Lombard or Clark Gable's clever quips and madcap antics. Bridgman uses clips from movies to bring this topic to life. His lively presentation style and passion for history and movies of this period will capture your imagination once again. Please join us for pre-lecture appetizers and no-host bar, followed by this extraordinary program. 6–8 pm; $40; cancel by November 10 N E W Grande Finales: Pairing Sweets and Spirits Wednesday, February 11, 2015 A memorable dessert makes a lasting impression. Make it even more memorable by pairing it with the perfect spirit or des- sert wine. WAC sommelier Sara Williams and Pastry Chef Lori Masaki will share their expertise and creativity at this evening of sweets and spirits. Among the desserts will be vegan strawberry meringue with vanilla champagne sorbet and gluten-free chocolate tuile, paired with a 2008 Riesling. Lori will create several other flavorful and enticing desserts to be paired with cordials, spirits or wines specially selected by Sara. Each will discuss what makes the combinations sizzle and how to pair flavors. Let your taste buds be tempted, and then give in as you savor each delectable union. You'll leave well- versed and wiser in pairing desserts with after-dinner beverages.
