It's pale yellow in color with a hint of lime green on the rim. Clear and lively with understated power and grace. Lemon verbena, green apple, toast, and kiwi aromas entice the nose. Meyer lemon, chalk, and stainless steel minerality blend seamlessly into a creamy finish. Discovery: All of the fruit for this elegant and rich wine is picked and sorted by hand. Each grape is used in the pressing and picked from severely pruned vines that are at least 40 years old. Salon ages this wine for an average of 10 years for a rich and divine taste. The wine is hand-disgorged when an order for this impressive champagne is received. CONCERT CORRECTION In 1964, The Beatles performed at the Seattle Center Coliseum, now known as KeyArena, not the Coliseum Theater, misnamed in the October issue. —Sara A. Williams is a WAC Restaurant Manager and a Level 1 Sommelier. This wine, cellared at the WAC, is available on the Torchy's wine list.
