OF SUNSHINE

Celebrate better weather with the
Pitcherful of Sunshine! Spring and
summer mean backyard barbecues,
pool parties, and breezy Sunday
brunches. This batch cocktail is
perfect for all such occasions! Bright
and citrusy Aperol pairs perfectly
with sunny Seattle afternoons—here's
hoping!—while your choice of orange
liqueur offers a sweet and refreshing
touch combined with the tang of
fresh lemon. Mix this one up ahead of
time and add the bubbles just before
serving to make hosting a breeze all
season long.
RECIPE
Serves 8
• 1 cup Aperol
• 1½ cups vodka
• ½ cup Cointreau or Grand Marnier
• ½ cup fresh lemon juice
• ½ cup fresh orange juice
• 2 cups soda water
• Ice
• Orange and lemon rounds
Mix Aperol, vodka, orange liqueur,
and lemon and orange juice in a
large pitcher. Stir thoroughly. Chill
mixture for at least one hour and up
to 12 hours maximum. Just before
serving, add ice and soda water. Mix
carefully to not let out all the bubbles.
Top pitcher with orange and lemon
rounds. Serve in tall glasses over ice! R
