Grits with Sno-Valley Mushrooms
Scoop up the perfect bite of soft grits with seasonal mushrooms. Located just
outside of Duvall, Sno-Valley Mushrooms cultivates one to two tons of edible
fungi weekly. Sno-Valley uses locally sourced sawdust and in-house spawn
grown on Washington grain. The mycocultural results of their work deliver earthy
flavors and umami richness from mushrooms such as lion's mane and coral
tooth. Beecher's Flagship Cheddar, a Seattle classic born in Pike Place Market,
and a smattering of sweet pea shoots complete this mouthwatering dish.
