Lore has it that Count Camillo Negroni asked his bartender friend Forsco Scarselli to strengthen his favorite cocktail, the Americano. By replacing the soda water with gin and the lemon with an orange, Scarselli created a star. The success of the Negroni helped form the Negroni Antica Distilleria in Treviso, Italy, where a ready-made version of the drink was produced. The cocktail scene in the Pacific Northwest, meanwhile, is evolving constantly. For the past several years, cocktails and boutique distilled liquors of all kinds have been barrel-aged and cask-finished. One shining example of barrel-aging done right is Epic Sh't Gin from Cadée, an award-winning distillery on Whidbey Island.
