By Rose Andres, WAC Bartender Every May, thanks to Cinco de Mayo, many of us gravitate to tequila-based drinks. But let's not forget tequila's so- phisticated sister, mezcal. Although all tequilas are mezcal, not all mezcals are tequila. Tequila must be made of blue agave and must originate from one of five Mexican states (usually Jalisco). Conversely, mezcal is primarily produced in Oaxaca and can be made from more than 30 varieties of agave. Tequila is produced by steaming agave and then distilling it in copper pots. Mezcal is cooked in earthen pits filled with wood and charcoal and then distilled in clay pots, giving it its traditional earthy and smoky flavor. So tequila or mezcal? How about both. Of late, mezcal has been making an appearance on craft cocktail menus around the U.S. Even a hint of this tradition- al spirit can impart a new level of depth and complexity. Try this light and refreshing blend of both delicious Mexican spirits to taste the smolder of mezcal and the spice of tequila. Cheers! Cocktail Corner Rose's Sun & Smoke • ½ oz. Mezcal Vago • 2 oz.
