12 | Washington Athletic Club Magazine | APRIL 2014 A la Carte By Mark Stelmach, Sous Chef The best time of the day Live your temptations with our happy hour sensations E veryone loves a great happy hour. What's not to love about great food and delicious drinks at excellent prices? When experienced with friends after a hard day's work, a flavorful happy hour hits the spot. Here in the WAC kitchen, we're constantly experimenting with new ideas for our happy hour menu. We know our members love the classics, but we also know many of you want to try new things. Personally, I've been on a real pho kick lately. The Vietnamese noodle soup—pronounced "fuh"—offers a hearty but not too heavy meal that always seems to satisfy. I recently tried cooking my own pho for our evening kitchen crew. One of our line cooks had never had pho before and loved it. Executive Chef Eric Floyd and I are now talking about how pho might play into WAC happy hour. As you may recall, we recently introduced a new WAC happy hour. Our Mark's happy hour favorites: 331/3 sliders Brisket-short rib-chuck patties, Roma tomato, butter lettuce, Bermuda onion, Macrina Bakery potato bun, applewood bacon, Tillamook aged cheddar, house sauce Penn Cove mussels Heirloom cherry tomato, herb butter, rosemary broth, brioche Lobster corn dogs Cognac mustard, spicy smoked ketchup intent from the beginning was to keep the menu changing while also offering member favorites. As we planned the new menu, Eric and I sampled various happy hours downtown. One of the things I noticed was many places' elevated prices. For as long as I've been around, "happy hour" at the WAC has been synonymous with "good deal." I also like happy hours that allow me to linger. As of last year, we increased ours from three hours to four. That's been a big hit with members. If you haven't been by Hagerty's or Torchy's for a while, I hope you'll stop in soon. I recommend the sliders, mussels, and lobster corn dogs. Bring a friend and leave the day's stress at the door. After all, there's a reason we call it happy hour. —Happy hour runs from 3–7 pm in Torchy's Bar and Hagerty's. Torchy's Bar is closed Sundays. Share your thoughts on happy hour at waclistens.com.
