APRIL / MAY / JUNE 2021 15 taste cinco de mayo Citrus-marinated grilled chicken Prep time: 20–30 minutes Marination: 4–8 hours Cook time: 30 minutes Serves six. INGREDIENTS • 4 lbs. chicken legs, thighs, and/or breasts (bone-in, skin-on). • ¼ cup Mazola corn oil • ⅔ cup orange juice • Juice of two limes • 3 tsp. sazón seasoning with coriander and annatto • 1 tsp. kosher salt • 1 tsp. black pepper • 1 tsp. granulated garlic powder • 1 tsp. ground cumin • 1 tsp. granulated onion powder • 1 tsp. dried oregano INSTRUCTIONS Combine the corn oil, citrus juices, and spices in a bowl or measuring cup and stir. Place the chicken into a zip-top bag or glass container, then pour the marinade all over the chicken. Thoroughly coat the chicken with the marinade. Cover and place the chicken in the fridge to marinate for a minimum of four hours and up to eight hours. When marination is complete, preheat a grill to medium-low heat. Cook the chicken for 30 minutes, turning frequently. Make sure not to walk away. Skin-on chicken can flare up quickly! Cook the chicken to 165 degrees in the center. Serve hot!
